Our philosophy

Skáli’s cuisine is contemporary, creative, and deeply connected to the land.

Here, nothing is processed except by our own hands. It’s a generous cuisine—both light and comforting. We always strive to stay as close as possible to the ingredients. The idea is to highlight each product with simplicity.

Craftsmanship and creativity are key ingredients for us.

We aim to comfort as much as to surprise. With bold combinations—if the guest isn’t bored by the third bite, then we’ve succeeded!

At Skáli, it’s the land that guides us. We design our menus based on what producers offer, what we find in our herb garden, or what nature provides.

Our cuisine is also influenced by travel.

Journeys through local products that we enjoy pairing with spices from elsewhere or with unexpected, faraway combinations.

In the Kitchen 

In the kitchen, the team creates dishes based on the seasons and the producers surrounding the restaurant: market gardeners, fish farmers, fishermen, breeders, and local farmers.

The kitchen team is led by Julien Durand.
A local at heart, he built a diverse career between Rouen, Paris, Rome, and Luxembourg before settling at Skali in autumn 2025, drawn by the unique setting and the nature surrounding the restaurant.

Julien offers a highly plant-forward cuisine, with a sensitive and technical approach. He creates original dishes full of color and texture.

Julien and his team present a modern approach to cooking, where everything is made by hand, using only locally sourced ingredients.

Passionate about pastry, Julien aims to create a continuous sense of emotion from starter to dessert by introducing guests to new flavors.

Timothée and his team welcome you in a warm setting.

Passionate about cooking and all things good, Timothée was born with a gourmet palate; as a child, when his mother was away, he would go behind the stove to cook up something better than reheated leftovers.

 

During his career, he worked the grape harvest at Marc Delienne's vineyard in Beaujolais.

This experience awakened a passion for wine that would never leave him.

 

From 2019 to 2021, he spent two years in Barcelona, before returning to Saint-Wandrille-Rançon, the village where he grew up, to open his own restaurant.

 

A curious mind and self-taught sommelier, Timothée has developed a solid knowledge of oenology over time. This passion drives him daily in the food and wine pairings he freely creates for Skáli.

THE PLACE

Skáli overlooks the green valley of Fontenelles, preserved zone, in the heart of the charming village of Saint-Wandrille.
A Norman postcard where half-timbered houses, meadows and old stones come together in a bucolic setting.


Completed in June 2023, the construction of the restaurant was entrusted to the Norman architect Maxime Cosme . Keen to design a sustainable and meaningful architecture,

 

He designed a generous space, rooted in the landscape. With its distinctive wooden cladding, the building blends into an exceptional environment, nestled between the centuries-old abbey on one side and nature on the other.
preserved within the Regional Natural Park of the Loops of the Seine Normande.

THE WINES

"To create the wine and spirits list, it's simple: we sought out as many organic alternatives as possible."

The goal is to think outside the box while highlighting quality products.

Tasting after tasting, at the estate or in the salons, I built the wine list according to my tastes.

We pride ourselves on working with living, terroir-driven wines.

We seek to tell a story through each bottle, to talk about the winemakers who create them, rather than just talk about the label.

The wine list changes frequently, allowing us to offer unique and original food and wine pairings.
